Introducción. La pandemia de SARS-CoV-2/COVID-19 y las restricciones sanitarias afectaron la disponibilidad, acceso y consumo de alimentos, impactando la alimentación y el estado nutricional. Objetivo. Determinar el efecto de la pandemia SARS-CoV-2/COVID-19 sobre el cumplimiento de las Guías Alimentarias Basadas en Alimentos de Chile, en una comunidad universitaria, antes y durante la pandemia. Materiales y métodos. Estudio de cohorte retrospectiva con 427 participantes. Se aplicó una encuesta online con preguntas basadas en los mensajes de las GABA. La encuesta se validó por juicio de expertos y análisis psicométrico, evaluando la concordancia con el estadístico de Kappa (K=89,95) y la confiabilidad con el coeficiente Alfa de Cronbach (=0,97). Se fijó como período antes de la pandemia al tiempo anterior a marzo del año 2020, y durante la pandemia, entre marzo del 2020 y octubre del 2021. Para medir los cambios antes y durante la pandemia se aplicó el test de simetría considerando un p <0,05 con un intervalo de confianza del 95%, mediante el software estadístico STATA versión 16. Resultados. Se observaron cambios estadísticamente significativos antes y durante la pandemia en los mensajes relacionados con el estado nutricional (p=0,000), consumo semanal de: productos de pastelería (p=0,0040), cecinas y embutidos (p=0,0034), frituras (p=0,0070), legumbres (p=0,0000), aguas (p=0,0000) y lectura e información nutricional de los productos (p=0,0000). Conclusiones. La pandemia de SARS-CoV-2/COVID-19 generó cambios en la alimentación y estado nutricional respecto a los mensajes de las guías. Se precisan políticas alimentarias y estrategias educativas en alimentación y en nutrición para emergencias sanitarias(AU)


Introduction. The SARS-CoV-2/COVID-19 pandemic, as well as health restrictions, impacted food availability, access and consumption, affecting dietary habits and nutritional status. Objective. To determine the effect of the SARS-CoV-2/ COVID-19 pandemic on the adherence to Chilean Food-Based Dietary Guidelines, within a university community, both before and during the pandemic. Materials and methods. A retrospective cohort study involving 427 participants was conducted. An online survey was administered, with questions based on the FBDGs' messages. The survey was validated through expert judgment and psychometric analysis, and agreement was assessed using the Kappa statistic (K = 89.95) while reliability was determined using the Cronbach's Alpha coefficient ( = 0.97). The period before the pandemic was defined as the time prior to March 2020, and the pandemic period was set between March 2020 and October 2021. Changes before and during the pandemic were measured using the symmetry test, considering a p value of <0.05 and a 95% confidence level, using the STATA 16 statistical software. Results. Statistically significant changes were observed before and during the pandemic in messages related to nutritional status (p = 0.000), weekly consumption of bakery products (p = 0.0040), cold meats (p = 0.0034), fried foods (p = 0.0070), legumes (p = 0.0000), water (p = 0.0000), and messages related to reading and nutrition information of products (p = 0.0000). Conclusions. The pandemic led to dietary changes in relation to FBDGs messages. Food policies and food and nutrition education strategies are required to address health emergency contexts(AU)

Resumen Objetivo: Crear la infografía de la guía de alimentación de Dieta Mediterránea Mexicanizada (DMM) y evaluar su comprensión. Material y Métodos: Estudio de tipo descriptivo, el cual constó de dos fases la 1ra. Se creó la infografía de la guía de alimentación de Dieta Mediterránea Mexicanizada. 2da. Se evaluó la apreciación y comprensión de la infografía de la guía de alimentación, en línea a población universitaria, incluidos familiares y conocidos. Resultados: 273 participantes de 42 años promedio, 74% mujeres y 26% varones, más del 94% de los participantes respondió comprender en su totalidad la infografía. DMM es práctica, aplicable, asequible, entendible, buena para el ser humano y ambiente. Conclusión: La Dieta Mediterránea puede prevenir parcial o totalmente el síndrome metabólico, la guía de alimentación de Dieta Mediterránea Mexicanizada promueve una vida sana y bienestar para todas las edades, respalda los objetivos de desarrollo sostenible, será una herramienta de salud pública, práctica, aplicable, asequible, entendible, apta para promoverse en la población mexicana.


Abstract Objective: To create the infographic of the Mexicanized Mediterranean Diet food guide and evaluate its understanding. Material and Methods: Descriptive type study, which consisted of two phases, the 1st. The infographic of the Mexicanized Mediterranean Diet food guide was created. 2nd Appreciation and comprehension of the food guide infographic was evaluated online for the university population, including relatives and acquaintances. Results: 273 participants with an average age of 42, 74% women and 26% men, more than 94% of the participants responded that they understood the infographic in its entirety. DMM is practical, applicable, affordable, understandable, good for humans and the environment. Conclusion: The Mediterranean Diet can partially or totally prevent metabolic syndrome, the Mexicanized Mediterranean Diet food guide promotes a healthy life and well-being for all ages, supports the objectives of sustainable development, will be a practical, applicable public health tool, affordable, understandable, suitable for promotion in the Mexican population.

Introducción. En la Argentina, según los datos de la última Encuesta Nacional de Nutrición y Salud, 4 de cada 10 niños, niñas y adolescentes (NNyA) entre 5 y 17 años presentan exceso de peso. Objetivo. Identificar las estrategias de marketing en las páginas de Facebook® e Instagram® de las marcas de los alimentos consumidos por niñas, niños y adolescentes (NNyA), y categorizarlos según las Guías Alimentarias para la Población Argentina (GAPA). Métodos. El análisis se realizó en las publicaciones de agosto y septiembre de 2019, se identificaron aquellas dirigidas a NNyA y se categorizaron los alimentos promocionados según las GAPA. Resultados. De las 200 marcas identificadas, 111 tenían página de Facebook® y 95 de Instagram®. Las marcas que tenían página de Facebook® presentaron 65 publicaciones y las que tenían Instagram®, 64 publicaciones. Las estrategias más utilizadas fueron la imagen del producto y la interacción con los consumidores. La mitad de las páginas estaban dirigidas a NNyA. De los alimentos promocionados, 6 de cada 10 correspondieron al grupo de opcionales según las GAPA. Conclusiones. Se evidencia la importancia de monitorear la implicancia de las redes sociales en las conductas alimentarias.


Introduction. As per the National Survey on Nutrition and Health, in Argentina, 4/10 children and adolescents aged 5­17 years are overweight. Objective. To identify marketing strategies on Facebook® and Instagram® of brands of foods consumed by children and adolescents and to categorize them according to the Dietary Guidelines for the Argentine Population (GAPA). Methods. The posts made between August and September 2019 were analyzed, identifying those targeted at children and adolescents and categorizing promoted foods according to the GAPA. Results. Out of 200 brands identified, 111 had a Facebook® page and made 65 posts and 95 had an Instagram® account and made 64 posts. Product image and interaction with consumers were the more used stategies. Six out of 10 of the foods promoted corresponded to the optional group according to the GAPA. Conclusions. It is important to monitor the implications social media have on eating behaviors.

Resumo O estudo visa avaliar a promoção dos subgrupos de AIN/MP anunciados em encartes de supermercados, considerando as características das redes e a tipologia dos encartes. Foram analisados encartes de cinco redes de supermercados da região metropolitana do Rio de Janeiro (junho/2019-maio/2020). Foram apresentados dados de abrangência e perfil socioeconômico das redes e tipo de encarte. Dos 68.110 alimentos, 30,6% são AIN/MP. Carnes/ovos foram mais promovidos (42,3%), seguido de frutas/hortaliças (20,2%) anunciados mais em encartes de hortifruti. Laticínios; cereais/farinhas/massas e bebidas/infusões representaram cerca de 10,0% dos anúncios. Leguminosas (3,8%), especiarias e cogumelos (0,2%) e oleaginosas (0,1%) foram pouco promovidos. Foram encontradas diferenças estatisticamente significativas na promoção de subgrupos segundo abrangência e perfil socioeconômico das redes. Frutas/hortaliças foram mais anunciadas em redes nacionais e voltadas para o público de alta renda em comparação às locais e voltadas para um público de média/baixa renda. Constatou-se desequilíbrio na promoção dos subgrupos de AIN/MP, com diferenças entre as redes e os tipos de encartes. Diante disto, deve-se dar luz à discussão sobre a regulação da promoção de alimentos no varejo alimentar.


Abstract The present study evaluated the promotion of natural/minimally processed foods (N/MPF) subgroups advertised in supermarket circulars by considering supermarket features and circular typology. We analyzed circulars published by five supermarket chains in the metropolitan region of Rio de Janeiro (June/2019-May/2020) and present data on the socioeconomic coverage and profile of the supermarkets and the types of circulars. Of the 68,110 types of foods, 30.6% were N/MPF. Meat/eggs were the most promoted ones (42.3%), followed by fruits/vegetables (20.2%), which were more often advertised by produce shop circulars. Dairy products, cereals/flours/pasta and beverages/infusions made up around 10.0% of the ads. Legumes (3.8%), spices and mushrooms (0.2%) and oilseeds (0.1%) were rarely promoted. Statistically significant differences were found in the promotion of subgroups according to supermarket coverage and their socioeconomic profiles. Fruits/vegetables were more often advertised by national chains and aimed at a high-income public than by local companies and aimed at a low/middle-income public. Promotion of N/MPF subgroups was disproportional due to differences among chains and types of circulars. As a result, a discussion on the regulation of food promotion in food retail is required.

Introdução: O Guia Alimentar para a População Brasileira aborda a compreensão e superação de potenciais obstáculos para a adoção de uma alimentação saudável, entre eles, custo dos alimentos e tempo. Objetivo: Investigar a ocorrência de tempo e custo enquanto obstáculos para uma alimentação adequada e saudável e sua associação com fatores demográficos e socioeconômicos em universitários. Método: Estudo transversal realizado de abril a maio de 2019. Os desfechos avaliados foram custo e tempo. As variáveis de exposição foram sexo, idade, composição de moradia, trabalho remunerado, classe econômica e turno de estudo. Resultados: Participaram da pesquisa 207 estudantes. Sobre o custo dos alimentos, 76,3% já deixaram de comprar frutas, verduras e/ou legumes devido ao preço. Em relação ao tempo, 69,9% já deixaram de preparar alguma refeição por falta de tempo. Custo se associou com sexo masculino, idade igual ou superior a 30 anos, morar com amigos, estudar no período noturno e/ou estar na classe econômica mais baixa; já tempo se associou com sexo masculino, idade inferior a 30 anos, morar sozinho, estudar no período diurno/integral e/ou não trabalhar. Conclusão: Grande proporção dos universitários enfrenta dificuldades, relativas a tempo e custo dos alimentos, para ter uma alimentação adequada e saudável.


Introduction: The Dietary Guidelines for the Brazilian Population addresses the understanding and overcoming of potential obstacles to adopting a healthy diet, including food costs and time. Objective: To investigate the occurrence of time and cost as obstacles to adequate and healthy eating and its association with demographic and socioeconomic factors in university students. Method: Cross-sectional study carried out from April to May 2019. The evaluated outcomes were cost and time. Exposure variables were sex, age, household composition, paid work, economic class and study shift. Results: 207 students participated in the research. Regarding the cost of food, 76.3% have already stopped buying fruits and/or vegetables due to the price. Regarding time, 69.9% have already stopped preparing a meal due to lack of time. Cost was associated with male gender, age equal to or greater than 30 years, living with friends, studying at night and/or being in the lowest economic class; time has been associated with being male, younger than 30 years old, living alone, studying daytime/full time and/or not working. Conclusion: A large proportion of university students face difficulties, related to time and food costs, to have a proper and healthy diet.

@#Introduction: Access to accurate and timely dietary information is of paramount importance in evaluating and developing well-targeted public health nutrition interventions. However, nationwide nutrition surveys are conducted infrequently because they are very costly to design, conduct and analyse. Dietary assessment tools, which are quick and cost- effective, are needed for population research and regular monitoring of Malaysians’ dietary habits. This paper describes the rationale and methodology of the Malaysian Healthy Diet Online Survey (MHDOS) project, which aims to bridge this knowledge gap on dietary intake of Malaysian adults. The main objective of the two-year project is to develop MHDOS as a valid tool to measure compliance with the Malaysian Dietary Guidelines 2020. Methods: The MHDOS project has three study phases, namely (i) adaptation of an online survey and established diet quality scoring system for Malaysia, (ii) usability, validity and reliability testing of the online survey; and (iii) online survey administration in a nationwide study. The survey will be administered to approximately 10,000 Malaysian adults aged 18-59 years. Discussion: MHDOS consists of 38 questions that measures the quantity, quality and variety of foods consumed. Individuals will receive a diet quality score that reflects their overall compliance with the Malaysian Dietary Guidelines and feedback on how to improve their scores. The findings of the online survey, which serve to complement information between larger surveys, will be useful to measure compliance of Malaysians to national dietary guidelines and inform public health interventions.

Abstract Objectives: to verify the adequacy of recommendations on food and nutrition for infants available on popular websites in relation to the "Twelve Steps for a Healthy Diet" from the Dietary guidelines for Brazilian children under 2 years of age. Methods: popular websites were searched via the Google platform to collect data about food recommendations for children under 2 years of age. The data was categorized according to criteria developed with the Guide: totally agree, partially agree, disagree, contradictory and absent. The websites were described according to the frequency of each step and the distribution in the categories. Results: 82 websites were included. Most frequent steps: 1 (84.1%), 2 (82.9%) and 4 (63.4%); least present: 8 (23.2%), 10 (19.5%), 11 (3.7%) and 12 (1.2%). The highest percentages of adequacy in relation to the Guide were steps 1 and 4 with 46.4% and 53.8%, respectively. Steps 3 (37.9%) and 7 (75.0%) had the highest percentages of disagreement or contradiction. Conclusions: there is proper information on the internet, however, these are mixed with missing, in disagreement, partially in agreement or contradictory information, which reinforces the importance of disseminating the recommendations of the Guide


Resumo Objetivos: analisar a adequação das recomendações sobre alimentação e nutrição de lactentes disponíveis em websites populares em relação aos "Doze passos para uma alimentação saudável" descritos no Guia alimentar para crianças brasileiras menores de dois anos. Métodos: websites populares foram buscados via plataforma Google para coleta de dados relativos às recomendações sobre alimentação de lactentes. As informações foram categorizadas segundo critérios desenvolvidos em relação à consonância com o Guia em: totalmente de acordo, parcialmente de acordo, em desacordo, contraditórias e ausentes. Os websites foram descritos e apresentados segundo frequência de cada passo e a distribuição segundo as categorias. Resultados: foram incluídos 82 websites. Passos mais presentes: 1 (84,1%), 2 (82,9%) e 4 (63,4%); passos menos presentes: 8 (23,2%), 10 (19,5%), 11 (3,7%) e 12 (1,2%). Os maiores percentuais de adequação em relação ao Guia foram os passos 1 e 4 com 46,4% e 53,8%, respectivamente. Os passos 3 (37,9%) e 7 (75,0%) apresentaram os maiores percentuais de desacordo ou contradição. Conclusões: identificou-se a presença de informações adequadas na internet, entretanto, estas se misturam com informações ausentes, em desacordo, parcialmente de acordo ou contraditórias, reforçando a importância da disseminação das recomendações do Guia.

ABSTRACT

Abstract Objective To develop and validate a protocol for the use of the Dietary Guidelines for the Brazilian Population (DGBP) in the individual dietary advice for pregnant women assisted in primary healthcare (PHC). Methods Methodological study that involved the elaboration of a protocol in six steps: definition of the format, definition of the instrument to evaluate food consumption, systematization of evidence on food and nutrition needs of pregnant women, extraction of DGBP recommendations, development of messages of dietary guidelines and content, and face validity. The analyses of the validation steps were carried out by calculating the Content Validity Index (CVI) and thematic content analysis. Results As products of the steps, the protocol structure was defined and the dietary advice for pregnant women were elaborated, considering physiological changes, food consumption, nutritional and health needs, and socioeconomic conditions of this population. The protocol was well evaluated by experts and health professionals in terms of clarity, relevance (CVI > 0.8), and applicability. In addition, the participants made some suggestions to improve the clarity of the messages and to expand the applicability of the instrument with Brazilian pregnant women. Conclusion The instrument developed fills a gap in clinical protocols on dietary advice for pregnant women focused on promoting a healthy diet, contributing to a healthy pregnancy. In addition, it demonstrates potential to contribute to the qualification of PHC professionals and to the implementation of the DGBP recommendations.


Resumo Objetivo Desenvolver e validar um protocolo para uso do Guia Alimentar para a População Brasileira (GAPB) na orientação alimentar individual de gestantes atendidas na atenção primária à saúde (APS). Métodos Estudo metodológico que envolveu a elaboração de um protocolo em seis etapas: definição do formato do documento, definição do instrumento de avaliação do consumo alimentar, sistematização de evidências sobre necessidades de alimentação e nutrição de gestantes, extração das recomendações do GAPB, desenvolvimento de mensagens de orientação alimentar e validação de conteúdo e validação aparente. As análises das etapas de validação foram realizadas através do cálculo do índice de validade de conteúdo e análise temática de conteúdo. Resultados Como produtos das etapas, a estrutura do protocolo foi definida e as orientações alimentares de gestantes foram elaboradas, considerando as alterações fisiológicas, consumo alimentar, necessidades nutricionais e de saúde e condições socioeconômicas desta população. O protocolo foi bem avaliado por especialistas e profissionais de saúde nos critérios de clareza, pertinência (índice de validade de conteúdo > 0,8) e aplicabilidade. Além disso, os participantes deram sugestões para melhoria da clareza das mensagens e para ampliar a aplicabilidade do instrumento em gestantes brasileiras. Conclusão O instrumento desenvolvido preenche uma lacuna sobre protocolos clínicos de orientação alimentar para gestantes focado na promoção da alimentação saudável, contribuindo para uma gestação saudável. Além disso, o instrumento demonstra potencial para contribuir na qualificação de profissionais da APS e implementação das recomendações do GAPB.

ABSTRACT

O Guia Alimentar para a População Brasileira (GAPB) baseia suas recomendações na extensão e propósito do processamento ocorrido nos alimentos, e sugere que a redução do consumo de alimentos ultraprocessados (AUP) está relacionada a melhora na qualidade da alimentação e consequentemente perda de peso. Apesar de alguns estudos terem observado impacto importante na qualidade da dieta, não há evidências que a redução no consumo de AUP seja acompanhada por redução no consumo de energia total. O objetivo deste estudo é avaliar a efetividade de uma proposta de intervenção para tratamento da obesidade em crianças baseada no GAPB. Foi realizado um ensaio clínico randomizado com crianças entre 7 e 12 anos, encaminhados pelo Sistema Nacional de Regulação (SISREG) para atendimento ao ambulatório de nutrição do Hospital Universitário Pedro Ernesto (HUPE). Os participantes do Grupo controle (GC) e do Grupo Intervenção (GI) participaram de 6 atividades educativas padronizadas e contextualizadas com os 10 passos do GAPB. No GI, também foi prescrito um plano alimentar individualizado, com base nas recomendações nutricionais. Análise de intenção de tratar foi realizada para avaliar a taxa de variação do desfecho primário (índice de massa corporal (IMC)) e secundários (circunferência da cintura (CC) e peso), entre os GI e GC, com base em modelos de efeito mistos. Estas análises também foram aplicadas para medir o consumo alimentar, avaliado pela taxa de variação de gramas de AUP. Adicionalmente, os resultados do IMC foram comparados com curvas de crescimento, desenvolvidas pelo método LMS, que representa a evolução do IMC da população do estudo sem intervenção. Dos 101 participantes, 51 foram alocados no GI. Ao final do estudo, o IMC declinou no GI (Δ = -0,27 kg/m2) em relação ao GC (Δ = + 0,53 kg/m2), com diferença estatisticamente significativa entre os grupos (p=0.0002). Ao comparar o GC com a curva LMS, observou-se maior aumento do IMC no grupo LMS (Δ = + 1,02 kg/m2; p<0,0001). Para mudança de peso, o aumento foi maior no GC (Δ= +5,51), comparado ao GI (Δ= +3,7, p=<0,0001). E não houve diferença significativa na trajetória da CC entre os grupos. Ambos os grupos apresentaram um declínio no consumo de gramas de AUP até o quarto mês e um aumento gradual nos meses seguintes, sem diferença estatisticamente significativa (p=0,77). A combinação de uma abordagem qualitativa baseada nas recomendações do guia com o aconselhamento da restrição energética por meio do plano alimentar mostrou-se eficaz na redução da obesidade infantil. As atividades educativas tiveram impacto no consumo de AUP, porém, há uma dificuldade em manter em longos períodos mudanças comportamentais. Uma vez que o consumo destes alimentos pode prejudicar o tratamento da obesidade infantil, são necessárias estratégias que proporcionem a redução do consumo de AUP ao longo do tempo.


The Dietary Guidelines for the Brazilian Population (DGBP) rely its recommendation on the of extent and purpose that occurred in food and suggests that the reducing the consumption of ultra-processed foods (UPF) improves diet quality and consequent weight loss. Although some studies have observed an important impact on the quality of the diet, there is no evidence that the reduction in the consumption of UPF is accompanied by a reduction in total energy consumption. Thus, the goal of this study is to evaluate the effectiveness of an intervention proposal for the treatment of obesity in children based on the DGBP. A randomized clinical trial was carried out with children between 7 and 12 years old, referred by the National Regulatory System (SISREG) to the nutrition outpatient clinic of University Hospital Pedro Ernesto (HUPE) are evaluated. Participants in the Control Group (CG) and Intervention Group (IG) participated in 6 standardized educational activities contextualized with the 10 Steps of DGBP. In the IG, an individualized food plan was prescribed, based on nutritional recommendations. Intent-to-treat analysis were performed to assess the rate of change of primary (body mass index (BMI)) and secondary (waist circumference (WC) and weight) outcomes between IG and CG, based on mixed-effects models. These analyzes were also applied to measure food consumption, assessed by the rate of change of grams of AUP. Additionally, the BMI results were compared with growth curves, developed by the LMS method, which represents the BMI evolution of the study population without intervention. Of the 101 participants, 51 were allocated to the IG. At the end of the study, BMI declined in the IG (Δ = -0.27 kg/m2) in relation to the CG (Δ = + 0.53 kg/m2), with a statistically significant difference between the groups (p=0.0002). When comparing the GC with the LMS curve, a greater increase in BMI was observed in the LMS group (Δ = + 1.02 kg/m2; p<0.0001). For weight change, the increase was greater in the CG (Δ= +5.51), compared to the IG (Δ= +3.7, p=<0.0001). And there was no significant difference in the trajectory of WC between groups. Both groups showed a decline in grams of UPF until the fourth month and a gradual increase in the following months, with no statistically significant difference (p=0.77). The combination of a qualitative approach based on the DGBP with energy restriction advice through the food plan proved to be effective in reducing childhood obesity. Educational activities had an impact on UPF consumption, however, there is a difficulty in maintaining behavioral changes over long periods. Since the consumption of these foods can impair the treatment of childhood obesity, strategies are needed to reduce UPF consumption over time.

RESUMEN El confinamiento por la pandemia del COVID-19 pudo impactar negativamente los hábitos alimentarios en Chile, principalmente debido al menor acceso a alimentos y los efectos psicológicos del encierro, cambiando patrones de consumo de frutas, verduras y legumbres. El objetivo del estudio fue comparar la frecuencia y cantidad consumida de frutas, verduras y legumbres y el cumplimiento de las guías alimentarias para estos alimentos en adultos residentes del sector oriente de Santiago, antes y durante el confinamiento. Se realizó mediante una encuesta digital de frecuencia de consumo y participaron 1.351 residentes de las comunas en confinamiento pertenecientes al sector oriente, mayores de 18 años y ambos sexos. En los resultados se observó una disminución en la frecuencia y cantidad consumida de frutas y verduras y un aumento en la frecuencia y cantidad de legumbres consumidas durante el confinamiento. El cumplimiento de la guía alimentaria de legumbres aumentó, para las frutas disminuyó y para las verduras se mantuvo. El confinamiento afectó negativamente el consumo de frutas, mantuvo el de verduras y el consumo de legumbres aumentó pero sigue siendo insuficiente. Los efectos del confinamiento en la alimentación podrían agravar la situación epidemiológica de los chilenos.


ABSTRACT Confinement due to COVID-19 pandemic could have a negative impact on eating habits in Chile, mainly due to decreased food access, the psychological effects of confinement, and the changing patterns of fruit, vegetable and legume consumption. The objective of the study was to compare frequency and quantity of fruits, vegetables and legumes consumed by adults from the eastern sector of Santiago de Chile before and during confinement, as well as compliance with dietary guidelines for these foods. 1.351 subjects over 18 years old, of both sexes and residents of localities in confinement within the eastern sector of Santiago answered a digital food frequency questionnaire. Results showed a decrease in the frequency and quantity of fruits and vegetables consumed and an increase in the frequency and quantity of legumes consumed during confinement. Compliance with the dietary guideline for legumes increased, it decreased for fruits and was unchanged for vegetables. Confinement negatively affected consumption of fruits, did not alter that of vegetables, and legume consumption increased, yet is still insufficient. The effects of confinement on food habits could aggravate the epidemiological situation of Chileans.

ABSTRACT

Las Guías Alimentarias Basadas en Alimentos (GABA) son un instrumento nacional de educación nutricional destinadas a la población general. En el contexto de alta prevalencia de enfermedades crónicas no transmisibles, relacionadas con dietas inadecuadas, buscan contribuir a alcanzar mejores estándares de alimentación. En el contexto americano, de alta prevalencia de sobrepeso y obesidad, las GABA forman parte de un conjunto de políticas gubernamentales para combatir estos problemas. El objetivo de este ensayo fue realizar un análisis comparativo de las GABA en nueve países americanos: Canadá, Chile, Estados Unidos, México, Paraguay, Colombia, Brasil, Uruguay y Argentina. Para la comparación se seleccionaron siete dimensiones generales: política, metodología, participación, mensajes, aspectos socioculturales, aspectos ambientales, y de implementación y evaluación, a partir de las recomendaciones para la elaboración de las GABA de organismos internacionales (FAO-OMS). Los resultados revelaron brechas en las guías de los países estudiados, destacando Brasil como uno de los países que pone mayor atención a la participación y a la incorporación de factores socioculturales en la producción de su documento. Mientras que Chile elude elementos como el género, el acceso y disponibilidad, la diversidad cultural, la sostenibilidad y los entornos alimentarios. Con guías alimentarias que abordan escasamente la propuesta FAO-OMS, es de esperar que en una futura actualización se consideren las dimensiones propuestas en un formato de desarrollo basado en la participación ciudadana, intersectorial y de expertos/as, fortaleciendo los aspectos socioculturales y ambientales(AU)


The Food-Based Dietary Guidelines (GABA) are a national instrument of nutritional education aimed at the general population. In the context of the high prevalence of chronic non-communicable diseases, related to inadequate diets, they seek to contribute to achieving better food standards. In the American context, with a high prevalence of overweight and obesity, GABAs are part of a set of government policies to fight against these problems. The objective of this trial was to perform a comparative analysis of GABA in nine American countries: Canada, Chile, the United States, Mexico, Paraguay, Colombia, Brazil, Uruguay, and Argentina. Seven general dimensions were selected for comparison: policy, methodology, participation, messages, sociocultural aspects, environmental aspects and, implementation and evaluation-, based on the recommendations for the elaboration of the GABA of international organizations (FAO-WHO). The results revealed gaps in the guidelines of the countries studied, highlighting Brazil as one of those that pay the most attention to participation and the incorporation of sociocultural factors in the production of its document. While Chile avoids elements such as gender, access and availability, cultural diversity, sustainability and food environments. With dietary guidelines that barely address the FAO-WHO proposal, it is expected that in a future update, the proposed dimensions will be considered in a development format based on citizen, intersectoral and expert participation, strengthening socio-cultural and environmental aspects(AU)

RESUMEN Introducción: Los hábitos alimentarios en escolares se han relacionado con las habilidades cognitivas y el rendimiento académico. Objetivo: Determinar la relación entre hábitos alimentarios y rendimiento académico en escolares chilenos. Métodos: Estudio transversal en 733 escolares de quinto al octavo básico. Se evaluaron hábitos alimentarios mediante frecuencia de consumo de grupos de alimentos, tiempos de comida, habilidades culinarias y gusto por preparar alimentos. Estas variables se relacionaron con calificaciones de las asignaturas de matemática y lenguaje. Resultados: Los escolares presentaron baja proporción de frecuencia de consumo saludable (FCS). Las niñas presentaron mayor FCS de pan (p<0,001), los niños presentaron mayor FCS de lácteos (p= 0,016). Por sexo, se observó diferencia en el rendimiento académico en lenguaje (p= 0,013). La FCS de lácteos se asoció con diferencias del rendimiento académico en lenguaje (p= 0,017) y matemática (p= 0,035). Desayunar se asoció a diferencias en el rendimiento académico en matemática (p= 0,028) y lenguaje (p= 0,001). No consumir pasteles y masas dulces (p= 0,016), y papas fritas, completos y masas fritas (p= 0,025) se asoció al rendimiento académico en matemática. Un 29,1% tiene habilidades culinarias, siendo 54% niñas (p= 0,006). La presencia de habilidades culinarias se relacionó significativamente con 7 de los 12 grupos de alimentos analizados. Conclusión: Los hábitos alimentarios se asociaron con el rendimiento académico de escolares.


ABSTRACT Introduction: Eating habits in school-age children have been associated with cognitive skills and academic performance. Aim: To determine the relationship between eating habits and academic performance in Chilean school-age children. Methods: Cross-sectional study with 733 school-age children. Eating habits were assessed by the frequency of consumption of food groups, mealtimes, cooking skills and if they liked to cook. Grades of math and language subjects were reported. Results: There was a low proportion of healthy consumption frequency (HCF). Girls had a higher HCF of bread (p<0.001), boys had a higher HCF of dairy (p= 0.016). By sex, academic performance in language was different in girls (p= 0.013). HCF of dairy was associated with academic performance in language (p= 0.017) and mathematics (p= 0.035). Eating breakfast was associated with academic performance in mathematics (p= 0.028) and language (p= 0.001). Not consuming cakes and sweet doughs (p= 0.016), French fries, hot dogs and sopaipillas (p= 0.025) was associated with academic performance in mathematics. 29.1% of children had cooking skills, 54.0% being girls (p= 0.006). Having cooking skills was significantly associated with 7 of the 12 food groups analyzed. Conclusion: Eating habits are associated to the academic performance of Chilean school-age children.

Objetivo: Analisar a abordagem do conteúdo do Guia Alimentar para a População Brasileira em livros de ciências do ensino fundamental. Métodos: Realizou-se um estudo transversal descritivo. Foram analisados os 13 livros de ciências do 8º ano das coleções aprovadas pelo Ministério da Educação para serem usadas no triênio 2017 a 2019. Mediante a leitura dos capítulos que abordavam a alimentação e nutrição, foi identificada a presença de conteúdos relacionados à temática dos dez passos para uma alimentação adequada e saudável do Guia Alimentar, à menção ao Guia e à pirâmide alimentar. A partir dos conteúdos identificados, os dados foram submetidos à análise estatística descritiva e foram categorizados de acordo com os sentidos identificados na perspectiva da alimentação adequada e saudável. Resultados: Todas as temáticas foram identificadas nos livros, as relacionadas ao consumo de alimentos naturais, ultraprocessados e ingredientes culinários estiveram presentes em todos. O tema da comensalidade foi frequente, mas pontual, e os demais que podem estimular a adoção de uma alimentação adequada e saudável foram pouco explorados. Foram identificadas poucas menções ao Guia e ampla citação à pirâmide alimentar. Observou-se uma tendência dos livros de manter o enfoque biológico na abordagem da alimentação. Conclusões: Evidenciou-se a presença de conteúdos do Guia Alimentar nos livros de ciências, porém na abordagem predominou a perspectiva do racionalismo nutricional. Verificou-se a necessidade de revisão dos conteúdos para melhor difusão do conceito ampliado de alimentação e nutrição, o que pode viabilizar a inserção da Educação Alimentar e Nutricional no ambiente escolar. Objective: To analyze the approach to the content of the Dietary Guidelines for the Brazilian Population in elementary school science books. Methods: A descriptive cross-sectional study was carried out. The 13 science books of the 8th year of the collections approved by the Ministry of Education were analyzed for use from 2017 to 2019. By reading the chapters that addressed food and nutrition, content related to the theme of the Ten Steps for an Adequate and Healthy Diet in the Dietary Guidelines, mention of the Guidelines and the food pyramid was identified. From the contents identified, the data were subjected to descriptive statistical analysis and were categorized according to the directions identified in the perspective of adequate and healthy diet. Results: All themes were identified in the books, those related to the consumption of natural, ultra-processed foods and culinary ingredients were present in all. The topic of commensality was frequent, but punctual, and the others that can encourage the adoption of an adequate and healthy diet were little explored. Few mentions of the Guidelines and a wide mention of the food pyramid were identified. There was a tendency in books to maintain the biological focus on the approach to food. Conclusions: The presence of contents of the Dietary Guidelines in science books was evidenced, however in the approach the perspective of nutritional rationalism predominated. There was a need to revise the contents to better disseminate the expanded concept of food and nutrition, which can enable the insertion of Food and Nutrition Education in the school environment. Resumo Objetivo Desenvolver e validar um protocolo de uso do Guia Alimentar para a População Brasileira na orientação alimentar da pessoa idosa durante as consultas clínicas individuais na Atenção Primária à Saúde (APS). Métodos Esta construção seguiu seis etapas metodológicas, sendo elas: (1) definição do formato do protocolo; (2) definição do instrumento de avaliação do consumo alimentar dos indivíduos; (3) extração das recomendações do Guia Alimentar aplicáveis para orientação alimentar individual; (4) sistematização de evidências sobre necessidades de alimentação e nutrição da pessoa idosa; (5) desenvolvimento de mensagens de orientação alimentar para a pessoa idosa; (6) validação de conteúdo e aparente e análise dos dados. Resultados Como produtos das etapas, foi definida a estrutura do protocolo e construída as orientações alimentares baseadas nas necessidades nutricionais e de saúde da população idosa, considerando a capacidade funcional e alterações fisiológicas e sociais desse ciclo de vida. O protocolo foi bem avaliado por especialistas e profissionais de saúde nos critérios de clareza, pertinência (Índice de validade de conteúdo >0,8) e aplicabilidade. Além disso, os participantes deram sugestões para melhoria da clareza das mensagens e para ampliar a aplicabilidade do instrumento com pessoas idosas brasileiras. Conclusão O protocolo pode contribuir para qualificação da orientação alimentar na APS, disseminação das informações do Guia Alimentar e promoção do cuidado integral e envelhecimento saudável da população.


Abstract Objective Develop and validate a protocol for the use of the Food Guide for the Brazilian Population (FGBP) in the dietary guidelines for elderly people during individual clinic appointments in Primary Health Care (PHC). Methods The elaboration followed six methodological steps, namely: (1) protocol format definition; (2) definition of the instrument for assessing food consumption; (3) extracting applicable Food Guide recommendations for individual dietary guidelines; (4) evidence systematization on dietary and nutrition needs of the elderly; (5) development of nutritional guidelines messages for the elderly; (6) content and apparent validation and data analysis. Results As products of the steps, the protocol structure was defined and dietary guidelines were elaborated based on the nutritional and health needs of the elderly population, considering the functional capacity and physiological and social changes of this life cycle. The protocol was well assessed by experts and health professionals as to clarity, relevance (content validity index > 0.8) and applicability. In addition, the participants made some suggestions to improve the clarity of the messages and to expand the applicability of the instrument with elderly Brazilians. Conclusion The protocol can contribute to the qualification of dietary guidelines in PHC, dissemination of information from the Food Guide and promotion of comprehensive care and healthy aging of the population.

RESUMEN Numerosos estudios coinciden en que el inicio de la vida universitaria se asocia a cambios poco saludables en prácticas alimentarias y estilos de vida que pueden consolidarse en la edad adulta. El objetivo fue valorar en qué medida estudiantes de tres carreras cumplen con las recomendaciones de las nuevas Guías Alimentarias para la Población Argentina de 2016. Se encuestaron 164 alumnos de Bioquímica (BQ), Licenciatura en Nutrición (LN) y Licenciatura en Biotecnología (LB) de la Universidad Nacional del Litoral. Los alumnos de LN se acercaron más a las recomendaciones que BQ y LB: mayor porcentaje realizaba cuatro comidas (45,0% vs 22,4% LB y 21,8% BQ, p= 0,009) y consumía diariamente leche/yogur (p= 0,042); los estudiantes de BQ presentaron el menor consumo de frutas (p= 0,000), mientras los de LB presentaron la menor ingesta de verduras (p= 0,023). El 79,3% del total realizaba actividad física y de ellos 59,8% alcanzó los 30 minutos diarios recomendados. La Universidad ofrece espacios de alimentación saludable (comedor universitario) y actividad física (predio de deportes) que no resultaban suficientemente aprovechados. Se concluye que resulta necesario planificar intervenciones para fomentar y/o mejorar patrones, consumo de alimentos y actividad física acordes a estilos más saludables en estos universitarios.


ABSTRACT Numerous studies agree that the beginning of university life is associated with unhealthy changes in eating practices and lifestyles that can be consolidated in adulthood. The aim of this study was to assess the extent to which the nutrition and physical activity of university students from three career programs comply with the recommendations of the new Dietary Guidelines for the Argentine Population (2016). One hundred and sixty-four (164) students of Biochemistry (BQ), Bachelor of Nutrition (LN) and Bachelor of Biotechnology (LB) of the Universidad Nacional del Litoral were surveyed. LN students approached the recommendations more than BQ and LB students: a higher percentage had four meals per day (45.0% LN vs. 22.4% LB and 21.8% BQ, p-value= 0.009) and consumed a daily portion of milk/yogurt (p-value= 0.042); the BQ students had the lowest fruit consumption (p-value= 0.000), while the LB students had the lowest vegetable intake (p-value= 0.023). All students presented patterns of intake and consumption of foods strongly influenced by the Argentine culture. Almost eighty percent (79.3%) of students did physical activity, but only 59.8% reached the recommended 30 minutes a day. The University offers healthy eating spaces (university canteen) and physical activity (sports grounds) that were not sufficiently exploited. It is concluded that it is necessary to plan interventions to promote and / or improve patterns of food consumption and physical activity, according to healthier lifestyles for university students.

RESUMEN Cumplir las recomendaciones incluidas en las Guías Alimentarias permite un acercamiento hacia un estilo de vida saludable. El objetivo de este estudio fue caracterizar los estilos de vida de la población chilena y su asociación al cumplimiento de 5 recomendaciones de las Guías Alimentarias Basadas en Alimentos (GABA) chilenas. Se utilizaron datos de la Encuesta Nacional de Salud 2016-2017. Los participantes fueron divididos en 4 grupos: aquellos que no cumplieron con ninguna recomendación, los que cumplían una, los que cumplían con 2 y los que cumplían con 3 o más recomendaciones saludables, estableciendo a este último como grupo de referencia. El 43,3% de la muestra no cumplió ninguna de las recomendaciones incorporados en esta investigación. De los que cumplían a lo menos 3, el 35,9% presentó un estado nutricional normal, el 38,9% reportó nunca haber fumado y el 82% se auto percibía como saludable. Además, los que cumplían las recomendaciones, presentaron niveles más altos de actividad física. Personas que incorporan y aplican las recomendaciones de las GABA, tienden a presentar conductas de vida más saludable. Estrategias comunicacionales efectivas y formativas en educación alimentaria sobre estas recomendaciones son claves para prevenir el acelerado y temprano crecimiento de las patologías crónicas.


ABSTRACT Compliance with dietary guidelines is essential for adoopting a healthy lifestyle. This study aimed to characterise the lifestyles of the Chilean population according to the fulfilment of 5 recommendations of the Food-Based Dietary Guidelines (GABA in Spanish) established in Chile according to WHO definition. Data from the 2016-2017 National Health Survey were used. Participants were divided into four groups: those who did not meet any recommendations, those who met one, those who met two and those who met three or more (reference group) GABA health recommendations. 43.3% of the sample did not meet any of the recommendations incorporated into this study. Of those who fulfilled at least three recommendations, 35.9% had a normal nutritional status, 38.9% reported never having smoked, and 82% perceived themselves as healthy. In addition, those who fulfilled the recommendations presented higher levels of physical activity (1343.5 MET/min/day [95% CI: 1049.9 - 1637.2]). From the results, it is inferred that people who incorporate and apply GABA recommendations tend to present healthier life behaviours. Consequently, effective and formative communication strategies in food education on these recommendations are crucial to preventing a fast and early growth of chronic diseases.

Resumo Este artigo analisa as dimensões sociais e culturais da alimentação abordadas nas diretrizes alimentares da segunda edição do Guia Alimentar para a População Brasileira (GAPB), contrapondo-o com a sua primeira edição. Trata-se de um estudo qualitativo. Empregamos a análise de discurso Pecheutiana. O universo de estudo são a primeira e a segunda edição do GAPB. A análise dos dados utilizou três etapas: identificação de textos similares e diferentes dos materiais; elucidação das dimensões sociais e culturais da alimentação nos materiais; e análise sistemática com contraposição dos discursos emergentes em ambos os GAPBs. Enfatizamos que na segunda edição os referenciais teóricos - estudos epidemiológicos, clínicos, sociológicos, antropológicos e saberes populares - e a utilização da classificação de alimentos NOVA favoreceram o desenvolvimento de diretrizes alimentares mais holísticas que abordam os padrões de alimentação e refeição, as práticas culinárias, o ato de comer e a comensalidade. Conclui-se que a segunda edição do GAPB possibilita aos profissionais de saúde e à população uma compreensão do alimento enquanto parte concreta da vida dos indivíduos e coletividade, extrapolando sua dimensão fisiológica e biológica.


Abstract This article analyzes the social and cultural dimensions of food addressed in the dietary guidelines of the second edition of the Dietary Guideline for the Brazilian Population (DGBP) in contrast to its first edition. This is a qualitative study. We employ the Pecheutian discourse analysis. The study universe is the first and second edition of DGBP. Data analysis used three steps: identification of similar and different texts of these materials; elucidation of the social and cultural dimensions of food in these materials; and systematic analysis with contrasting emerging discourses in both DGBPs. We emphasize that in the second edition the theoretical references—epidemiological, clinical, sociological, anthropological studies, and popular knowledge—and the use of the NOVA food classification favored the development of more holistic dietary guidelines that address food and eating patterns, culinary practices, the act of eating and the commensality. It is concluded that the second editions of DGPB allows health professionals and the population an understanding of food as something concrete in the life of individuals and collectivity, extrapolating its physiological and biological dimension.

ABSTRACT Objective To develop, validate and analyse intra- and inter-raters' agreement and reliability of a scale for the evaluation of food and nutrition education practices in primary health care. Methods Three theoretical references were used for the development of items with answers on a 4-point scale (not observed, partially/satisfactorily/fully observed): the Brazilian Dietary Guidelines, the Interprofessional Collaborative Practice and the Family Health Strategy as models for organizing primary health care. The scale was submitted for content and face panel validation and it was further reevaluated online. Thirty specialists used the scale for the rating of 4 videos produced for the study showing food and nutrition education practices in primary health care settings. Intra- and inter-raters agreement and reliability were analyzed by test at one time point and retest 30 days later. Results The scale initially included 72 items but was reduced to 17 items after content and face validation, together with a fill-out manual that was reviewed by experts. In the re-evaluation, all 17 items were maintained, and content adjustments were made in the manual. Thirty raters applied the scale to the videos in the test, and 28 in the retest. All videos obtained combined kappa values of >0.4. In the test-retest, 19 raters showed >80% agreement; in the inter-rater evaluation, 14 raters generated kappa values >0.75. Conclusion The scale underwent content and face validation and showed to be useful to diagnose the absence and the full addressing of the Brazilian Dietary Guidelines content with good intra- and inter-rater agreement and reliability in different settings of Primary Health Care.


RESUMO Objetivo Desenvolver e avaliar a validade e a confiabilidade de uma escala de avaliação das práticas de educação alimentar e nutricional na Atenção Primária em Saúde. Métodos Para o desenvolvimento dos itens, com quatro opções de resposta cada (não observado, parcialmente/satisfatoriamente/plenamente observado), foram utilizadas as recomendações de três referenciais teóricos - o Guia Alimentar para a População Brasileira, Prática Colaborativa Interprofissional e Estratégia Saúde da Família - como modelos de organização do cuidado na Atenção Primária. A escala passou por validação de conteúdo e aparente com painéis presenciais, sendo posteriormente reavaliada em plataforma online. Trinta especialistas aplicaram a escala na avaliação de quatro vídeos com encenações de práticas de educação alimentar e nutricional na Atenção Primária. Foram analisadas a concordância e a confiabilidade intra e interobservadores com teste e reteste após 30 dias. Resultados A escala foi desenvolvida com 72 itens, sendo reduzida a 17 itens após validação de conteúdo e aparente, acompanhados de manual de preenchimento revisado por especialistas. Na reavaliação, os 17 itens foram mantidos e o conteúdo do manual foi reajustado. Na avaliação dos vídeos, a escala foi aplicada por 30 avaliadores no teste e por 28 no reteste Todos os vídeos obtiveram kappas combinados >0,4. No teste-reteste, 19 avaliadores apresentaram concordâncias >80%; na avaliação interobservadores, 14 avaliadores apresentaram kappas >0,75. Conclusão A escala passou por validação de conteúdo e aparente e mostrou-se adequada para diagnosticar a ausência e a abordagem plena dos conteúdos do Guia Alimentar, com boa concordância e confiabilidade intra e interobservadores em diversas situações de cuidado na Atenção Primária.

ABSTRACT

The study of the diet quality should include not just the nutritional adequacy but also incorporate the multidimensional understanding and the current dietary recommendations. This study aimed to evaluate the relevance, clarity, and comprehensibility of the Scale of Quality of Diet (ESQUADA). Nutritionists' perspectives about the relevance and clarity of the items were evaluated through focus groups between November and December 2016. An exploratory content analysis investigated the themes that emerged from the focus groups, which were organized in a structured codebook. Two reviewers applied it to the data. Inter-rater reliability was analyzed by the kappa coefficient. The coding was analyzed using the frequencies and central aspects of the sub-themes. Laypersons' comprehension of the items was evaluated using a question regarding whether they understood each item in online questionnaire in February 2018. Descriptive statistics investigated the comprehensibility of each item. The reviewers presented adequate reliability on coding the data. Three themes emerged from the data considering the nutritionists' suggestions. The theme Item relevance indicated that the items assessed diet quality while considering sociocultural influences. However, the nutritionists suggested attention was needed to how some items were expressed and their response options. Of relevance, the themes Item clarity and Clarity of alternatives primarily encompassed discussions regarding item text (44%) and discrimination of alternatives (24%). The study of the comprehensibility indicated that all items were readily understood. These results support the relevance of the ESQUADA for evaluating quality of diet as well the comprehensibility of all the items by individuals uneducated in public health(AU)


El estudio de la calidad de la dieta debe incluir la adecuación nutricional además sus dimensiones y las recomendaciones dietéticas actuales. Este estudio evaluó la relevancia, claridad y comprensibilidad de la Escala de Calidad de la Dieta (ESQUADA). Las perspectivas de los nutricionistas sobre la relevancia y claridad de los ítems se evaluaron en grupos focales entre noviembre y diciembre de 2016. Un análisis de contenido exploratorio investigó los temas que surgieron de los grupos. Estos temas fueron ordenados en un libro de códigos estructurado. Dos revisores lo aplicaron a los datos. La fiabilidad inter-evaluadores fue analizada por el coeficiente kappa. La codificación se analizó utilizando las frecuencias y aspectos centrales de los subtemas. La comprensión de los ítems por personas sin conocimientos de nutrición se evaluó mediante una pregunta sobre el entendimiento de cada ítem en uno cuestionario online in febrero de 2018. Las estadísticas descriptivas investigaron la comprensibilidad de cada ítem. Los revisores presentaron adecuada fiabilidad en la codificación de los datos. Tres temas surgieron de los datos. El tema Relevancia del ítem indicó que los ítems evaluaron la calidad de la dieta mientras consideraban las influencias socioculturales. Sin embargo, los nutricionistas sugirieron la necesidad de atención en el texto de algunos ítems y sus opciones de respuesta. Los temas Claridad del ítem y Claridad de las opciones abarcaron principalmente las discusiones sobre el texto del ítem (44%) y la discriminación de las opciones (24%). El estudio de la comprensibilidad indicó que todos los ítems se entendían fácilmente. Estos resultados apoyan la relevancia de ESQUADA para evaluar la calidad de la dieta y la comprensión de todos los ítems por personas sin conocimientos de nutrición(AU)

Resumo O objetivo desse trabalho foi expor a teoria, propor a prática e avaliar as dificuldades da nova classificação dos alimentos, apresentada na segunda edição do Guia Alimentar para a População Brasileira. Foi utilizado um questionário com uma lista de 30 alimentos divididos em quatro grupos: alimentos in natura ou minimamente processados (I), ingredientes culinários (C), processados (P) e ultraprocessados (U). Os participantes classificaram os alimentos antes e depois de um minicurso. O escore de classificações corretas na avaliação Global (C, I, U, P) foi significativamente maior depois (Mediana = 23) que antes do minicurso (Mediana = 13) (Teste dos Sinais de Wilcoxon; z = -7,33; p = 0,000; Delta de Cliff δ = 0,96). O baixo percentual de acertos antes do minicurso entre os participantes justifica ampla divulgação do tema e mais ações como essa para estudantes, profissionais e para a população em geral.


Abstract The objective of this work was to present the theory, propose the practice and evaluate the difficulties of the new food classification system that was presented in the second edition of the Dietary Guidelines for the Brazilian Population. The questionnaire used included a list of 30 foods divided into four groups: in natura or minimally processed foods (I), culinary ingredients (C), processed foods (P) and ultra-processed foods (U). The participants categorized the foods before and after a mini-course. The correct classification score in the Global Assessment (C, I, U, P) was significantly higher after the mini-course (Median = 23) than before the mini-course (Median = 13) (Wilcoxon Signal Test; z = -7.33; p = 0.000; Cliff's Delta δ = 0.96). The low percentage of correct answers before the mini-course justifies the wide dissemination of the theme and the need for more similar courses for students, professionals and the general population.
